Wood-fired Slow Cooked BBQ Ribs

Sticky BBQ ribs that fall off the bone are one of life’s greatest treasures. This recipe is super easy, perfect for a hot day when you don’t want to use your oven and negates the need for a store bought sugary BBQ sauce.
We are lucky to live near an H Mart so we use spare ribs for this recipe with tons of meat on them. We find that we get a better cut there than a normal supermarket but grab whatever ribs you fancy! We love to serve this with fermented coleslaw and baby potatoes to round it out.
Method

Pop all your marinade ingredients into a sauce pan and bring to a boil, whisking to combine. Reduce to a simmer, stirring frequently until it’s thickened and reduced slightly. Let cool.

Pour over your ribs in a lidded container and give them a good shake to coat. Leave in the fridge for at least four hours but best overnight.

4 hours before you’re ready to eat, pop them with all the marinade sauce in your slow cooker on high. Keep an eye on them as they come closer to time - you want them soft and almost ready to fall off the bone but not there yet.

Remove the ribs and set aside. Pour the liquid from the slow cooker into a saucepan and reduce it down over medium heat. This will be your basting sauce.

Heat your pizza to 350C with your cast iron skillet inside. Right before you’re ready to cook your ribs, add some wood to your pizza oven and close the vent to create a smokey inside.

Cook your ribs for approximately 15 minutes, basting regularly with the leftover marinade. Repeat the smoke tactic 2-3 times to keep it nice and smokey.

Serve hot with some fermented coleslaw, steamed baby potatoes and any other sides you fancy!
Notes
- You can also finish your ribs on a normal BBQ or using your oven grill if you don’t have a pizza oven.
