Japchae

We love Korean food and are very lucky to live near what is known as “little Korea” in the London area. But eating out all the time gets expensive and sometimes you just want that takeaway taste while feeling like it’s a little healthier from choosing how much sugar etc to add.
Japchae is one of our favourite Korean dishes so I just had to try making it from home. This one doesn’t disappoint!
Method

Start by slicing your steak into thin, ribbon like slices and place in a bowl with your marinade ingredients, mixed well. Leave for at least 20 minutes.

Cook your noodles to packet instructions, drain and rinse with cool water. Place in a large bowl with the dressing ingredients - don’t mix.

Sauté your onion. When translucent, add the carrots, mushrooms, red pepper and bean sprouts and cook until lightly softened. Move to noodle bowl - don’t mix.

In the same frying pan, quickly fry your steak until cooked through - approx 1-2 minutes on each side.

Add to bowl and now you can mix everything together, sprinkling with sesame seeds to finish. Serve warm and garnished with some ice bath crisped spring onion.
Notes
- It’s very easy to make this veggie - just skip the beef!
