Wood-fired Mac & Cheese

As an American, of course I love a good mac and cheese. This one is surprisingly easy to make as it doesn’t require a roux and it appeals to my soul as it does require lots of butter.
It’s a great quick addition to a BBQ - we like to serve it alongside wood-fired buffalo wings and a green salad.
Method

Cook your macaroni on the stove under it’s al dente.

Preheat your pizza oven to 260C with your skillet.

Whisk together your eggs, milk, melted butter and a pinch of salt. Add your cheese and cooked pasta, stirring to combine.

Pour into your skillet and cook for 5-10 minutes until golden brown. Serve hot!
