Spinach & Cheese Puffs

This recipe is simple, tasty and looks like you made an effort for a picnic, hosting spread or as a finger food side.
Method

Crumble the feta and add it to a mixing bowl with the cream cheese, 1 beaten egg, and salt and pepper.

Wilt your spinach over low heat in a lidded pot, gently squeeze or pat with a paper towel to remove excess liquid, and add to the mixing bowl. Mix well.

Spoon your filling over the pastry sheet, distributing evenly. Roll the sheet with the filling from the long edge and lightly press down to make a seal when you reach the edge.

Place seam side down on a chopping board and slice with a sharp knife to create individual rolls.

Shift each roll onto a parchment paper lined baking tray, and coat each with an egg wash and sprinkle with sesame seeds.

Cook for circa 20 minutes in an oven pre-heated to 200C or until golden brown and puffy.

Remove to a wire rack to cool slightly and serve warm.
Notes
- I prefer to eat these warm but they’re equally good cool or cold if you want to transport for a picnic or make in advance.
