When I first moved to the UK, I craved buffalo wings dipped in blue cheese dressing. A staple on any classic American menu, I was aghast that not only did they not exist, neither did blue cheese dressing in the shops.

Thankfully, you can now find them quite regularly - though blue cheese dressing is still a rarity, not a given.

Whacking these in the pizza oven gives an extra smokey flavour that really hits home for me - but these are also easy enough to cook on a grill or in the oven.

Method

  1. Start with your buffalo sauce. Melt your butter in a pot on the hob and add in the rest of your sauce ingredients. Let simmer until slightly reduced and leave to cool.
  2. Pour over your buffalo wings and leave to marinate at least two hours in the fridge, but overnight is best.
  3. Combine all your dressing ingredients in a bowl except your cheese. If you have an emulsion blender, roughly chop your Stilton and blend until creamy with a few good chunks left. If not, crumble your cheese more finely and stir in. Without the blender, it won’t be quite the same consistency but to be honest, it’s good enough. Place in the fridge to set the flavours until you’re ready to eat.
  4. Preheat your pizza oven to 250C with a skillet inside and bring your wings up to room temp.
  5. Move your wings onto a lightly oiled skillet, retaining the marinade sauce. Cook for circa 20 minutes, turning and basting occasionally with the marinade until cooked through and your sauce is nice and thick.
  6. Serve hot and dig in!
