Wood-fired Garlic Butter Clams

One of our favourite dishes while we’re there is garlic butter clams, served with a crusty bread to lap up the leftover buttery liquid.
With an unexpected heatwave, we decided to try it out for ourselves…
Method

Heat your pizza oven with a cast iron skillet to 300C.

Pour your clams and wine into the skillet, add your butter, garlic and chopped rosemary. Give it a stir and grate some salt over it.

Pop it in the oven and add a little more fresh rosemary to the fire to give your woodsmoke some extra flavour.

Leave for approximately 10 minutes, giving it an occasional shake until your clams have heated through and have a smoked look to the top shells.

Serve hot with a crusty bread and green salad for a perfect, low effort summer meal.
Notes
- You can use fresh clams for this recipe, just double the wine to enable a sauce to form.
- We get our clams from H Mart - they come in big affordable bags and are easy to leave in the freezer for a quick meal.
- You can make this recipe in a normal oven, you just won’t have the benefit of the smokey flavour.
